A touch of \u003cem\u003ebột nếp chín\u003c\/em\u003e (roasted glutinous rice flour) adds a subtle toasted glow and a hint of Maillard-like savoriness, reminiscent of the baked mooncakes I grew up with.\u003c\/p\u003e\n\u003cp\u003eAt the heart is my favorite combination of mooncake fillings: taro, red bean, salted egg, and lotus seed.
